Artichokes
Before you cook them, cut the pointy tips off and cut the bottom off just a bit to get rid of the stem. You can use scissors or a knife for this. Rub the cut edges with half a lemon.
Simmer them in a large pot of water for about 20-30 minutes, until a fork pierces the bottom easily. I usually stick a garlic clove in the water as well, and squeeze the rest of the lemon into the pot.
Serve with a mayonnaise and lemon juice mixture.
