Savory Baked Rice

Baking rice has a slightly different texture than when it's cooked on the stove. Plus, it makes it really easy to serve for company as there's no last minute fussing.

I got this basic recipe from my grandmother. Her original recipe called for 1/2 cup butter but I've toned it down quite a bit! Saute some onion, then brown the rice a bit. Add the liquid and herbs, cover, and put in the oven with a roast chicken. Mmmm!

1/3 cup diced onion
2 Tbs butter or oil
1 cup rice
2 cups chicken broth
1/2 tsp salt
1/2 tsp dried basil
1/2 tsp sage
1/2 tsp marjoram
1/2 tsp thyme

Preheat the oven to 350 or 400, whichever matches what else you're cooking.

Heat the oil or butter and saute the onion about 5 minutes, until softened. Add the rice and saute another minute or two, stirring constantly so it doesn't burn.

Add the broth (or water if you'd rather) and seasonings and bring to a simmer. If your pan can't go in the oven, transfer this to a covered casserole dish. Otherwise, just cover and bake for an hour or so. This goes great with an oven fried chicken or another dish that takes about an hour to cook.
