Beef Marinades

I like marinating flank steaks and London broils especially. You can marinade whole steaks or cut them into cubes or strips for different dishes like stir-fries and kebobs. Double the recipe and throw one meal portion in a freezer bag with the marinade. You'll be one huge step ahead on your dinner prep when you pull it from the freezer the night before and allow it to thaw in the refrigerator.

Simplest Beef Marinade

2 Tbs olive oil
2 Tbs lemon juice
2 cloves garlic, minced
1 Tsp dried parsley or 1 Tbs fresh, chopped
salt and pepper

Steak Sauce and Balsamic Vinaigrette

  • 1/2 cup steak sauce
  • 1/2 cup balsamic vinaigrette
  • 2 cloves minced garlic

 

Beer & Cilantro Marinade

1 12-oz can or bottle of beer
1/2 cup chopped cilantro
3 garlic cloves
1/4 cup lime juice
2 tsp (or more) chili powder
1 tsp ground cumin

You can chop everything up or put it in the food processor with the beer and liquefy it. Put it in a glass container or plastic zippered bag with the steak and marinade in the refrigerator a few hours, turning occasionally.

Mild Soy and Vinegar Marinade

2 cloves garlic, minced
1 Tbs dried onion (or use fresh shallots or chopped white onion)
2 Tbs soy sauce
1/4 cup balsamic vinegar
2 Tbs olive oil
black pepper to taste

Teriyaki Marinade

1/2 tsp dry or 1 tsp fresh ginger
1/3 cup sherry
1 cup soy sauce
1/3 cup pineapple juice
1/2 tsp pepper
2 Tbs brown sugar
1/2 a grated onion or equivalent dried onion flakes
1 clove garlic, minced

Worcestershire Lemon Marinade

Juice from 3 lemons (about 1/3 cup)
1/4 cup Worcestershire sauce
1/2 cup oil
1/2 cup red wine vinegar
1/2 cup soy sauce
2 Tbs dry mustard powder
2 cloves garlic, minced
1 tsp black pepper

Lime and Soy Marinade

4 Tbs lime juice
2 Tbs soy sauce
1 tsp minced garlic
1 tsp minced fresh ginger
1 tsp sugar
salt and black pepper to taste
