Carne Asado Tacos
Plan ahead a few hours for this fantastic dinner. Marinate the steak in the morning or at lunch if you're around home. If you're starting it in the morning, I might throw in some olive oil to soften the effect of the lime.
Marinate the steak a few hours in:
- 1/4 cup lime juice
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp ground red or black pepper
Mix the marinade ingredients together in a shallow glass dish, then put the steak slices in and move them around until well coated. Cover the dish and refrigerate a few hours. Pull the steak out a bit ahead of time, while you're making the salsa and grating the cheese and so forth.
Heat a cast iron or other heavy skillet on the stove and cook the steak slices a few minutes on each side, then them on a plate while you cook the rest. When they are all done, slice them into strips then cut the strips into smaller pieces, about 1/2″.
Heat some corn tortillas directly over a gas burner or in a pan on the stove or in the microwave.
Serve with avocado pico del gallo salsa.
