Beef with Sherry and Mushrooms

This is an easy "throw together" dinner since you don't need to brown the meat first. Definitely good enough for company, particularly as it cooks a long time and you can sit and chat while dinner is made!

London Broil or other similar cut of beef, cut into 1" cubes
1 can cream of mushroom soup (or make your own)
1 or 2 cans mushroom pieces or 1/2 pound sliced fresh mushrooms
2 cups water
1/3 cup sherry
1 packet dry onion soup mix
1/2 cup sour cream

Mix everything except the sour cream together in a casserole dish. Cover and cook at 325 for 2-3 hours. Check now and then to make sure there's enough liquid and add water if not.

Stir in the sour cream and serve over rice or egg noodles.
