Caprese Salad (Tomatoes, Mozzarella and Basil)
1 large tomato per person- 3 slices of mozzarella per tomato
- a handful of fresh basil, cut into small slivers
- a few Tbs of olive oil
- salt to taste
Layer slices of really good homegrown tomatoes with slices of mozzarella cheese. Salt lightly and drizzle olive oil over the tomato and cheese, then sprinkle with the slivers of fresh basil.
Alternately, you can layer whole leaves of basil.
