Cucumber Salad
My mom used to make something similar to this when I was growing up and I always loved. Her version required boiling 1/2 cup vinegar, 1/4 cup sugar, 2 Tbs water, 1/2 tsp salt and 1/8 tsp pepper then cooling it before marinating 2-3 sliced cucumbers in it. It is good, especially served with some sour cream, but this is even simpler since it eliminates the boiling step. It came from an old Mennonite cookbook and has become my standard. Sometimes I add sliced tomatoes as well.
- 2-3 cucumbers, peeled and thinly sliced
- 1/2 cup green peppers, chopped (optional)
- 1/2 cup sliced onions
- 1 cup water
- 1/4 cup vinegar
- 2 tsp salt
- 3 Tbs sugar
Mix the cucumbers, green peppers and onions in a small bowl.
Mix the water, vinegar, salt and sugar in a small bowl and then pour over the cucumber mix. Refrigerate at least an hour before serving.
