Fish Kebabs
Fish prices can be high or low, depending on where you live and how fresh the fish. However, despite the frequently higher price per pound of fish, I do try to work some into our budget because it's so healthy. Sometimes the longer term health costs need to be weighed against the shorter term food bill. If you can swing some firm white fish (we like swordfish). This is a very easy and delicious way to cook it up. You can stretch the fish here by simply adding more vegetables to each skewer. Serve with some rice or potatoes, soup or salad to make a more filling dinner.
2 Tbs soy sauce
1 Tbs chopped fresh rosemary
2 Tbs lemon juice
2-3 Tbs olive oil
1 tsp honey
1 tsp fresh ginger (I actually used that stuff in a tube)
1/4 tsp salt
a dash of pepper
3 cloves garlic, minced
3/4 pound swordfish or other firm fish, cut in 1" cubes
1 red pepper, cut in 1" pieces
Mix up everything but the fish and vegetables. Marinate the fish cubes in it in a shallow dish or plastic bag for about 30 minutes to an hour. Thread the fish and vegetables on a skewer and barbecue for about 8 minutes total, turning once or twice.
