Lo Mein with Leftover Ham
I recently browsed through How to Cook without a Book (recommended by someone who found my CheapCooking.com site--thanks!) and saw Lo Mein, like fried rice but with spaghetti instead of rice. Obviously you could use other leftover meats as well.
Sauce:
* 1/4 cup soy sauce
* 1/4 cup chicken broth
* 2 tsp rice wine vinegar
* 2 tsp sesame oil
* 1/2 tsp red pepper flakes or more
* 1 tsp sugar
8 ounces dry spaghetti or 4 cups leftover cooked spaghetti
2 carrots, diced
1 stalk celery, sliced
1 onion, chopped
2 Tbs oil, divided
2 cups diced ham
2 cloves garlic, minced
1/2 tsp minced fresh ginger
Cook the spaghetti. Mix up the sauce.
Heat 1 Tbs of the oil on high and add the onion, cooking and stirring a few minutes. Add the carrots and cook a minute. Add the ham and cook another couple of minutes, then the celery for another minute. Add the ginger and garlic, stirring quickly and then remove everything from the pan.
Put another tablespoon of olive oil in the pan and cook the spaghetti a few minutes, then added in all the meat and vegetables plus the sauce you mixed up before. Stir for a few minutes and serve.
