Grilled Yellow Squash

grilled yellow squashGrill up some fresh yellow squash from the garden or your farmer's market. Just slice thinly, then coat with a bit of olive oil and sprinkle on the herbs of your choice. Tonight I used garlic salt and a mixture of some fancy Italian herb mix that a client gave me. But while the mixes are fun, don't feel like you have to go out and buy something special. If I hadn't been given this, I would have used some oregano and/or some thyme. I actually find the mixes a bit limiting. I'd rather just create my own combinations each time.

Slice the squash into 1/4 inch slices. Brush with some olive oil on both sides and sprinkle with the herbs of your choice. Grill a few minutes on each side and serve.
