Turkey Casserole

Looking for ideas to use up some of that extra turkey?

2 cups diced turkey
1 1/2 cups leftover gravy
salt and pepper to taste
1 1/2 cups cracker crumbs
1/4 cup butter

Combine the turkey, gravy, and 1/2 the cracker crumbs with salt and pepper. Mix and put into a greased casserole dish. Melt the butter and brown the rest of the cracker crumbs for a few minutes, then put them on top of the casserole. Bake at 350 for 30 minutes.

If you have leftover mashed potatoes as well, make some potato croquettes to go with the casserole.
