Roasted Brussels Sprouts and Apples
My mother never cooked these but I remember the first time I tasted them, at some totally cowboy steak house place in Clayton, CA that a former teacher took me to for lunch. Somehow, I loved them! I wasn't into cooking then so have no idea how they were fixed, but I have played with a few recipes now and then and this one was really good! Even my teenager age them!
- 8 ounces Brussels sprouts, ends trimmed and then quartered
- 1/2 cup diced apple
- a good splash of apple juice, 2 Tbs or so
- 2 tsp olive oil
- 1/2 tsp dried thyme
- a dash each of salt and ground pepper
Heat the oven to 375 F.
Mix everything together in a bowl and then pour onto a jelly roll pan or other shallow baking dish. Roast about 25 minutes, stirring now and then.
I made these and some roasted red potatoes at the same time, just dividing the pan roughly in half.
This is one of those recipes that is great if you're having folks over for dinner. You can get everything ready ahead of time, then throw into the oven half an hour or so before you want to eat.
