Best Yet Zucchini Bread
3 eggs
1 cup oil
2 cups sugar
2 cups grated zucchini
1 Tbs vanilla
3 cups flour
1 tsp salt
1 tsp baking soda
1/4 tsp baking powder
2 tsp cinnamon
Beat the eggs well, then add the oil, sugar, zucchini, and vanilla and blend. Add the rest of the ingredients and mix. Pour into two greased loaf pans and bake 1 hour at 325 F.
