Best Yet Zucchini Bread
I try new zucchini bread recipes every summer I think, but this is our favorite so far. I really like the cinnamon in it.
- 3 eggs
- 1 cup oil
- 2 cups sugar
- 2 cups grated zucchini
- 1 Tbs vanilla
- 3 cups flour
- 1 tsp salt
- 1 tsp baking soda
- 1/4 tsp baking powder
- 2 tsp cinnamon
- 1/2 - 1 cup of mini chocolate chips (optional)
- 1/2 cup chopped walnuts (optional)
Beat the eggs well, then add the oil, sugar, zucchini, and vanilla and blend. Add the rest of the ingredients and mix. Pour into two greased loaf pans and bake 1 hour at 325 F.
If your garden is overrun with zucchini you can grate it and freeze it in 2 cup portions and bake with it later.
