Broiled Apricots with Mascarpone

My apricot tree is fully loaded so apricot desserts are on the menu. Here’s a very simple one I saw in Pure Simple Cooking: Effortless Meals Every Day by Diana Henry.

Preheat your broiler. Halve your apricots and put them skin side down (cut side up) in a baking dish.  Dot with a bit of mascarpone cheese. Sprinkle with a bit of sugar. Top with blackberries or blueberries.  Broil 3 minutes. Sprinkle a bit more sugar on and broil another 3 minutes.

As an aside, I really like this cookbook. I’ve just renewed it from the library for the third and final time so I broke down and ordered my own copy from Amazon.
