Bring a large pot of water to boil. When it boils add the spinach and cook just 1 minute, stirring. Then drain by pouring into a colander. When it's cool enough to handle, pick up handfuls and squeeze out the excess water. Roughly chop the drained spinach.
Heat the oil and cook the onion and garlic until softened. Add the ground beef and brown it as you break it up into small pieces.
When the meat is cooked, add the spinach and cook a few minutes. Stir in the Worcestershire sauce and salt and pepper to taste.
Mix together the eggs and Tabasco, then pour into the meat and spinach mixture, stirring until the eggs are set.
Pour the whole thing out onto a platter and top with the Parmesan.
