Chicken Recipes (and Turkey, too)

Lots of people are intimidated by the idea of roasting a whole chicken, but it's really quite easy. Rather than a single recipe, I wrote up a few variations in this article on how to roast a chicken. If you're cooking up a turkey, I've got a few ideas as well, including one recipe where you turn the turkey around a few times and another where you cook the turkey covered in a cheesecloth soaked in wine and butter.

I love the convenience of those big bags of boned, skinned chicken breasts. I can adjust the size of a recipe easily by adding or subtracting one. They thaw quickly in the microwave if you forgot to plan ahead!

If you need to cut one up, do it while still partially frozen. It's much easier to cut that way.
