Turkey! Leftover Recipes for After the Holidays

I always buy a large turkey to ensure we have some leftovers. I have nieces and nephews that love to take some home as well.

After the big meal, I like to pick all the meat off the bones and pack it up. If you're going to freeze it, it stays nice and moist if you freeze the meat with some broth or turkey gravy. If you made broth from the giblets and neck to use for your gravy, save any leftover broth you might have for freezing with some sliced turkey. I'm usually so tired by the end of the meal though that I pack all the meat I'm keeping into one big container or bag and deal with sorting it out the next day. Some will be frozen in smaller portions (2 cups works well) and some made into turkey sandwiches with this .

If we've eaten early enough, I like to start a big batch of turkey broth right away. If you don't have the energy, just bag the bones and refrigerate until tomorrow OR even freeze them and make broth later if you have room. Get started with this recipe for Turkey soup.
