Blueberries are on sale around here. My kids love them plain, in cereal, in pancakes, and in smoothies. This morning we made blueberry pancakes.
Blueberry Pancakes
Add fresh or thawed blueberries to your pancakes as they’re cooking to ensure an even distribution of berries.
Ingredients
- 1 cup milk
- 5 Tbs butter
- 2 eggs
- 1 cup flour
- 4 tsp baking powder
- 1/4 tsp salt
- a handful or two of blueberries
Instructions
- Warm the milk and butter until the butter is melted. Let this cool a bit or else it will cook the eggs when you add them.
- In a separate bowl, whisk the eggs until well beaten. Add the cooled milk and butter and stir. Sprinkle the dry ingredients around on top of the wet ingredients, then stir them together. You don’t want a big clump of baking powder or salt somewhere, so do sprinkle them around rather than pouring them in.
- Heat your pan or griddle. Add 1/4 cup or so of the pancake batter at a time to form pancakes. As they are cooking, drop the blueberries around on top of the pancakes. Flip the pancakes over when bubbles start to form on top of the batter and cook until done.
