I did a lot of my shopping for the graduation party at Costco. In particular, I bought big bags of broccoli, snap peas and peppers–and have some left over to use up or freeze! It’s been cold here. Well, cold for us. I know many of you won’t think much of a low of 30, ha ha, but for us that’s cold! I used a bunch of the broccoli and about half a head of cauliflower to make the Broccoli and Cauliflower Salad.
Looking at the leftover broccoli and cauliflower I decided to make a cream soup and remembered how good and easy this cream of broccoli soup recipe was. I used half cauliflower and half broccoli with oatmeal to thicken it up a bit. Instead of Cheddar cheese, I added some of the leftover cheese slices from the party. I’m not even sure right not what kind it was… white anyway!
I still have more broccoli to use up or I could blanch and freeze it. Also more snap peas. We’re down to the last bit of ham and then I think I’ll use the ham bone to make my favorite split pea soup.
The chickens have been enjoying a leftover roll every morning. They really don’t mind stale bread. You should have seen them gobble up the leftover cornbread I made a few weeks ago.
