I’m reminded why I started this blog. The other night I threw together a cucumber salad that had sour cream, vinegar, and dill with sliced cucumbers. My dinner guest and I could not stop eating it! I usually make a cucumber salad with just vinegar, water, and sugar. And that one’s good, but the sour cream was a nice touch for a change.
Last night I thought I’d make that cucumber and sour cream salad again, but I could not find the recipe! I came here to the blog first and was mad at myself for not getting it written up and posted. Then I went through my most obvious cookbooks. I could not find one that looked familiar. I searched online and found this one and tried it. It was missing something. I added some sugar. That wasn’t quite it.
I’m so mad! Do any of you have a favorite recipe? I’m growing cucumbers so will be eating a lot in another month or so! Great recipes are welcome!

That’s so funny! I went on line to search for a cucumber salad I made last weekend that my husband loved. I can’t find it again! I swear it was on cooks.com. It was sour cream, cucumbers, garlic, white wine vinegar, salad oil, salt and dill.

1 med cucumber, halved lengthwise and thinly sliced
1/4 tsp. salt
2 lg. green onions w/ tops, finely sliced
1/4 c. radishes, thinly sliced
dressing
1/2 c. reduced-fat sour cream
2 Tbsp. tarragon or white wine vinegar
1 Tbsp. finely chopped fresh dill or 1 tsp. dried dill
1 tsp. sugar
1/2 tsp. prepared mustard or dijon mustard
1/4 tsp. pepper
Scoop seeds out of cucumber. After slicing measure 2 cups, sprinkle with salt & let stand 30 minutes. Drain well. In a small bowl combine the cucumber, green onions & radish. In a small bowl whisk together the sour cream, vineger, dill, sugar, mustard & pepper. Pour over the cucumber mixture, toss to coat. Cover and refrigerate for 1 hour.
