This is what you bring to a party when you think you have nothing to fix and don’t want to go to the store. You can gussy them up with herbs or pepper, use different cheeses, shape them into little bowls or just serve them flat.
It’s not much of a recipe per se but here are some guidelines.
Use parchment paper or a Silpat Silicone Baking Mat to line your baking sheet.
Grate a harder cheese, like Parmesan or Cheddar.
Sprinkle about 1 tablespoon of grated cheese per crisp into a roughly circular shape. Sprinkle lightly. You want it to be lacy in the end. You can leave the cheese plain or sprinkle black pepper, rosemary or other herbs on.
Bake at 350 for 9-10 minutes. Don’t let them brown but do let the cheese fully melt and bubble a bit. Let them sit on the pan for a minute after you pull it from the oven, then cool the Frico on a wire rack.
I read that you can also shape these over shot glasses or in muffin tins to create little cups which you can then fill with something delicious. Or drape them over a small rolling pin to create taco-like shapes to fill. You can also use these to garnish soups or stews.
