A few nights ago I was by myself for dinner and decided on a bacon, tomato and avocado sandwich as I have wonderful tomatoes in the garden and had a beautiful avocado from the farmer’s market. But I wanted a bit of something more too…
I spied the leftover twice baked potato in the fridge and at first thought to just reheat it but I felt like having something crispy. So when the bacon was done, I left a bit of the fat in the pan, chopped up the potato and made a sort of hashbrowns with it. Just right!
I’ve often made hashbrowns with leftover baked potatoes but will remember the option of using leftover twice-baked potatoes from now on.
