Three years ago we had a high school graduation party for my eldest. You can read it about here. I’m re-reading it tonight because I’m in the planning stages of a high school grad party from my youngest! Woo hoo! She wants a taco bar and fruit skewers. I’ll put her and her friend on the fruit skewering duty. 😉 Several guests have asked what they can bring so I’m thinking of the whole menu. I’m not afraid to accept help! 😉 I know I personally enjoy helping someone by bringing a dish. I’m borrowing several tables and chairs from my neighbors. (We always share things at parties like this.)
Are you throwing a grad party this month? What’s on your menu? I’ve done lots of large parties at this point and I always end up winging a few things, adding to the menu at the last minute because I like to try new things and it’s great to try them when the whole menu is not dependent on them!
We’ll order a cake again. I’m trying to decide about the tortillas. When I make them for us, I usually serve them soft or fry up some corn tortillas myself but I may buy the pre-crisped ones if I can find a good deal. When I fry them up myself, they don’t seem to stay crisp. Does anyone have any tips on pre-frying them so they stay crisp? I don’t want to be frying at the last minute.
We’ll have a mix of salsas. (Last week I made a killer mango salsa recipe to which I added some black beans. I’ve also made a cucumber and mango salsa with black beans that is good.) We’ll have a big pot of cooked pinto beans and maybe some black beans as well. Chopped lettuce, tomatoes, green onions, avocados…
We’ll have ground beef and chicken for the tacos, which I’ll cook ahead.

A taco bar is a great idea! Everyone will love it. And skewers too. Especially when you are able to recruit help.
