A few years ago (okay 6 years ago!) I wrote this post about some unique sandwich ideas. I loved folks’ comments about their own strange sandwiches. As a kid I remember once asking my mom for a white bread and ketchup sandwich. Ugh! She said she’d make it but I had to eat it. I was totally out of love with the idea halfway through but I ate it. I don’t think I ate ketchup for a year or so after that. It’s funny how those things stick with you. If I remember correctly, we were staying in a cabin in the primitive area of the Sawtooth Mountains in Idaho on vacation. Running water but no electricity I think. Maybe gas to cook on… I also remember feeding squirrels there, and the outhouse (postered with pinups) and the caution to “look out for bears.”
So what are some sandwiches you like that are unusual outside your family? In the summer, my breakfast nearly every morning is toast with butter (or cream cheese for a splurge), sliced homegrown tomatoes and salt.
One of my other favorite sandwiches is leftover fried eggplant (from making eggplant Parmesan) with some tomato sauce. My former mother-in-law taught me that one so it’s probably traditional in Italian households. Still one of my favorites! She would fry the eggplant at lunch, serve sandwiches, then make eggplant Parmesan for dinner. I’m growing eggplants this year in hopes of making this several times!
