This yogurt bread is my daughter’s favorite bread currently. I make a smaller (1 1/2 pound loaf) so that it stays fresh. This recipe is straight out of The Bread Lover’s Bread Machine Cookbook: A Master Baker’s 300 Favorite Recipes for Perfect-Every-Time Bread-From Every Kind of Machine, which I bought based on Amazon reviews and have loved! But this has become our daily bread, so to speak.
If I’ve just made the yogurt and still have the whey left from draining it, I use that instead of water. (The whey doesn’t go to waste otherwise though–my dogs and chickens love it!) Her recipe all call for gluten but I haven’t found any yet and have to say the loaves come out fine without it!
Yogurt Bread
Ingredients
- 3/4 cup water or whey
- 1 cup plain yogurt I use whole milk
- 3 1/2 cups bread flour
- 2 tsp salt
- 2 tsp SAF yeast or 2 1/2 tsp bread machine yeast
Instructions
- Combine all the ingredients in your bread machine and turn it on.

I just looked up the recipe again to make sure I didn’t leave it out but there is no sugar in the recipe, which apparently came from James Beard initially. It makes a really nice loaf with simple ingredients.

Why is there no sugar in this recipe? I thought all bread recipes required sugar for the yeast to activate. There is only a tiny bit of sugar in the yogurt. Thanks.

I think I generally use Active Dry. I buy it from Costco and keep the big bag in the freezer and a small jar in the fridge. I rarely proof it. I know I’ve also used instant sometimes but I use it just the same as active dry.

Using a Hamilton Beach bread maker. So I used a cup and a half of wheat flour 2 cups white flour 1 teaspoon sea salt and water. I had to add more flour in the first cycle it was very sticky and maybe I could even cut back a little bit on the water. The bread came out with the top sunken which I run into a lot.But the bread taste fine I’m thinking I could use some honey. However it seems pretty healthy and I’d rather make the bread myself than to buy it at the store. Thanks for the recipe, if I perfect it I’ll let you know thanks.

I’m so sorry! I just checked the ingredients to make sure I hadn’t mistyped something and the amounts are right. I haven’t made it in a few years but made it regularly before. She does have 1 Tbs of gluten added but I was making this before I could find gluten at the store. That would help it rise more.

doesnt work. i tried this several times and the bread comes out doughy and too moist.

I’m making this now – didn’t have bread flour, so I used AP w/ 1Tbl gluten for each cup. Also didn’t have regular yogurt, so I used greek yogurt instead. AND I subbed RapidRise Instant Yeast instead of SAF yeast (it said it was “great for bread machines” on the back of the envelope). Fingers crossed! I’ve never used yogurt in bread before, so I hope this turns out tasty.

I printed out your recipe for Yogurt Bread and noticed that for the yeast it says :2 tsp SAF yeast (or 2 1/1 tsp bread machine yeast). How much is the bread machine yeast?
