Roast Chicken Legs, Onions, Potato Wedges and Asparagus

The weekend was so busy I ended up grocery shopping on my lunch hour today. I was busy moving rocks and building new raised beds and shoveling compost and planting radishes, beets and basil. Dinner last night was a frittata with potatoes, leeks, chives, cheese and eggs.

When I went grocery shopping today I checked out the discount meat places. There are two in my local store: one for chicken/turkey and one for beef/pork.  Actually the poultry one had ground bison for half off today too!  But I opted for a pack of organic chicken legs that were half off. I try to buy organic when I can.  So I spent $3.60 for 4 servings of organic chicken legs (our servings at least…).

I also picked up some locally grown asparagus. My own patch is not up to producing much yet. Last year I added two more crowns to expand it, but I can’t harvest them yet.

Dinner tonight was a really easy and really good roast everything one pan dinner.

I cut up a couple of peeled Russet potatoes and cut them into quarters lengthwise. I sliced up an onion into fairly thick slices. And I trimmed the asparagus by cutting off the rough ends.

I turned the oven onto 400F as I put the potatoes, onions and chicken legs in a roasting pan and coated them with olive oil, rolling the parts around until well coated. Then I sprinkled with salt and pepper.  I left each in its own area of the pan so I could take things out as they got done, figuring the chicken would need a bit more time.  I sprinkled some fresh rosemary (from the garden) on the chicken. I cooked everything for half an hour, turned the pieces around and put back in for 15 more minutes. By then the onions were done, so I removed them and added the asparagus, adding a bit more oil and turning them to coat, then adding some salt and pepper.

Put everything but the onions back in the oven and cooked another 15 minutes total, turning the potatoes and asparagus partway through.

This was a non-recipe dinner.  If it had been warm outside, I would have cooked the same things on the grill but it cooled down tonight so I was happy for the warmth of the oven in the house.  And it just goes to show how good food cooked simply can taste so good.
