Stir-Fried Asparagus with Garlic

I was hoping to post this Chinese chicken recipe I saw online. I’ve got a great picture even! Alas, the sauce was way too salty. I hate that.

But the good news is that I looked around for a stir fry vegetable to serve with the chicken and found this easy and good stir-fried asparagus recipe in Simple Chinese Cooking. I hadn’t tried this recipe before but it was delicious.  Other recipes I’ve liked from the book include Mongolian Beef, Stir-Fried Bean Sprouts, Stir-Fried Zucchini, Carrots and Celery, Chilled Cucumber Salad, and a Bean Sprout Salad, which I also loved.

Stir-Fried Asparagus with Garlic

A quick and easy stir-fry of asparagus and garlic. Once you start cooking it only takes about 2 minutes.

Ingredients

  • 1/2 pound of asparagus
  • 1 Tablespoon peanut oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1 Tablespoon dry sherry or shao hsing wine
  • 3 Tablespoons water or chicken broth
  • 1/2 teaspoon sesame oil

Instructions

  • Trim the wood ends off the asparagus. Peel the thick end if you’d like to make it more tender. Slice each spear in half on the diagonal.
  • Heat the peanut oil in a wok or frying pan until it shimmers slightly. Add the garlic and stir-fry 10 seconds, then add the asparagus and stir-fry 1 minute. Add the wine and stir-fry 30 seconds. Add the water or stock and stir-fry another 30 seconds or until just tender.
  • Add the sesame oil and serve.
