A quick and easy stir-fry of asparagus and garlic. Once you start cooking it only takes about 2 minutes.
Ingredients
1/2poundof asparagus
1Tablespoonpeanut oil
2clovesgarlic, minced
1/2teaspoonsalt
1Tablespoondry sherryor shao hsing wine
3Tablespoonswateror chicken broth
1/2teaspoonsesame oil
Instructions
Trim the wood ends off the asparagus. Peel the thick end if you'd like to make it more tender. Slice each spear in half on the diagonal.
Heat the peanut oil in a wok or frying pan until it shimmers slightly. Add the garlic and stir-fry 10 seconds, then add the asparagus and stir-fry 1 minute. Add the wine and stir-fry 30 seconds. Add the water or stock and stir-fry another 30 seconds or until just tender.
