Apple Fritters

A few weeks ago Marlo mentioned a nearby bakery that he said had “the best” apple fritters. It was late afternoon when he mentioned it but I kept thinking about apple fritters. It’s been ages since I’ve had one!

After dinner I spotted a few apples sitting in my fruit bowl and decided it was time to have apple fritters again. I looked through a few recipes but most seemed more fussy than I felt like doing (whipping egg whites separately, for example) until I saw this one from Jacques Pepin in his Essential Pepin (a hefty tome with 700 recipes!).

This one was quick and easy and in just a few minutes, we had a plate full of homemade apple fritters to eat for dessert.

Mix up a quick batter of egg, flour and water. Chop the apples and stir them into the batter. Heat some oil in a skillet then add the fritter batter and cook a few minutes on each side. Drain on wire racks, then sprinkle with powdered sugar and serve! Yum!

Apple Fritters

I made these twice in one week, making just half a recipe each time. 

Ingredients

  • 1 egg
  • 1 cup water
  • 1 cup flour
  • 4 cups chopped or julienned or whatever pieces of apple about 3 apples
  • 1 cup neutral oil like canola oil
  • 1/2 cup powdered sugar

Instructions

  • Whisk together a batter of 1 egg, 1 cup flour and 1/3 cup of water.  It will be thick. Once it’s smooth, whisk in the other 2/3 cup water.  The batter should be thin and smooth.
  • Stir 4 cups (about 3 apples) chopped or julienned or whatever pieces of apple into the batter. 
  • Heat 1 cup of neutral oil in a large heavy skillet. When hot, pour about 1/3 cup of the batter into the pan and flatten it so it’s no more than 1/2″ thick. Make about 4 or 5 fritters at a time, depending on your pan size. Cook 4 minutes on the first side, about 3 minutes on the 2nd. 
  • Drain on a wire rack and make more fritters, until the batter is all gone. 
  • Sprinkle with powdered sugar.

Notes

You can use this same batter to make vegetable fritters or herb fritters. Just mix in chopped vegetables or whole herb leaves.
