I made these twice in one week, making just half a recipe each time.
Ingredients
1egg
1 cupwater
1cupflour
4cupschopped or julienned or whatever pieces of apple about 3 apples
1cupneutral oillike canola oil
1/2cuppowdered sugar
Instructions
Whisk together a batter of 1 egg, 1 cup flour and 1/3 cup of water. It will be thick. Once it's smooth, whisk in the other 2/3 cup water. The batter should be thin and smooth.
Stir 4 cups (about 3 apples) chopped or julienned or whatever pieces of apple into the batter.
Heat 1 cup of neutral oil in a large heavy skillet. When hot, pour about 1/3 cup of the batter into the pan and flatten it so it's no more than 1/2" thick. Make about 4 or 5 fritters at a time, depending on your pan size. Cook 4 minutes on the first side, about 3 minutes on the 2nd.
Drain on a wire rack and make more fritters, until the batter is all gone.
Sprinkle with powdered sugar.
Notes
You can use this same batter to make vegetable fritters or herb fritters. Just mix in chopped vegetables or whole herb leaves.
