Hazelnut Meringues
A great low-fat cookie. Joy of Cooking says just 1 gram of fat per cookie. Have the egg whites at room temperature before you start whipping them for maximum volume. I just realized I left out the almond extract so I’ll report back on whether that’s optional!

Apple Cake
I followed my niece’s lead in this recipe from my mom and used applesauce rather than oil. I have a batch of home canned applesauce that is a bit cinnamon heavy. I’m thinking I’ll use it all up in baking treats like this since I’m the only that likes it plain!
