Bacon, Watercress and Cheese Omelet with Fried Potatoes

Dinner tonight was two repeat recipes. It has been cold here, for many days in a row. I know it’s all relative and my cold, here in the San Francisco, is vastly different than those of

Chickens!

you who live elsewhere. I read the weather reports for back East and down South and I know have nothing to complain about. So I’m not complaining, just commenting. Multiple nights below freezing in a row here is unusual.

I’m trying to remember to cover my new lime tree and hoping most of my other plants survive.   I’ve got new chickens, too, so they are benefiting from a heat lamp in their coop these days!  Some days I open up the coop to let them into the room and they are sitting all warm and cozy on their perch and they look at me as if it say “I’m sorry. Why are you opening that door and letting a draft in?”  But if I leave it open, they generally venture out for an hour or two, nibbling on the grass and such.

I made this omelet, but with bacon, watercress, sour cream and some grated Cheddar. Very good! Omelets are such a good quick weeknight dinner.  I made one large omelet with 4 eggs and split it in half to serve.

I served the omelet with these fried potatoes, although for a lighter meal you might opt for just a nice green salad.

    Omelet is so simple to make and it tastes so very yummy! My favorite is with Mozzarella cheese. I frequently add the cheese to the omelet in the last minute of cooking.
