There was lots of chicken on the menu this past week because once I open a pack I try to use it up so it doesn’t get lost in the freezer. Yet even with a chicken-heavy menu, there was enough variety to be interesting.
What I Cooked
Mon: Chicken tinga tacos from Margaritaville, Mexican corn
Tue: Kung pao broccoli, coconut chicken tenders with dipping sauce (both from Cravings: Hungry for More by Chrissy Teigen, Amazon link )
Wed: Red chicken curry, (Cravings: Hungry for More ), rice
Thur: Chicken fajitas, salad
Fri: Cheeseburgers (Margaritaville the Cookbook), sweet potato wedges
Sat: We had some friends over and made a couple of white sauce pizzas. One was a spinach, bacon and onion; the other was pepperoni, sausage, pineapple and onion. They brought a salad.
Sun: Leftover chicken fajitas
