I have this recipe on an old recipe card in my Mom’s handwriting. I used to make it when the girls were little and our apple trees were bursting with fruit…then somehow I didn’t make it anymore. I ran across it the other day and had just picked some apples so I made it again, halving the recipe and using 2 eggs. Then I made it again. It’s that good!
Mom’s Apple Walnut Cake
And old-fashioned snack cake that almost has more apples than cake.
Ingredients
- 4 cups coarsely chopped apples
- 2 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 3 eggs well beaten
- 2 teaspoons vanilla
- 1 cup chopped walnuts
GLAZE
- 1 cup sugar
- 1/2 cup buttermilk
- 1/2 cup butter
- 1/2 teaspoon baking soda
Instructions
- Mix the dry ingredients, then stir in the wet ones, then stir in the nuts. Pour into a greased 12″x9″ baking pan and bake at 350F for one hour.
- After you pull the cake out, mix the glaze ingredients (sugar, buttermilk, butter and baking soda) in a saucepan and bring to a boil. Boil 3 minutes. Pour over cake.
