Packing Healthy Lunches on the Cheap

Packing a lunch to take to work or school can save you tons of money (and be healthier), but I sometimes run out of ideas and just get tired of “leftovers” that are the same as dinner.  My teen has taken lunch to school every day this school year, except about half a dozen times, so my ideas have been pushed to the limit!  It really helps that she has access to a refrigerator and a microwave, but we’ve also purchased some of the new Fit & Fresh Lunch on the Go containers plus some fun Bento box containers.

    Due to the craptacular economy I am now on a very tight budget, and have started packing all my own lunches to take to work with me. So I need them very cheap, but also packed full of energy since I now work a landscaping labor job and burn approximately 10,000 calories a day. (well … I burn more calories than I can possibly eat and still function) I just found your site and I am loving it.

    One of my favorite new lunches is “fish tacos”. I found a delicious, cheap, and super easy recipe for home made tortillas here: http://www.om-nom-nomnivore.com/features/118-hot-and-fresh-flour-tortillas

    You’ll want to make your tacos as soon as the tortillas are done because they dry out quickly and lose pliability, or at least make sure they are well sealed as soon as possible. Then I make some tuna salad, slap it on the tortilla along with some shredded lettuce, cilantro, diced tomatoes with green chiles, lime juice and sour cream. Sometimes I skip the sour cream and go for ranch and a sprinkling of sea salt and pepper, really you can put dang near anything you want on them to suit your taste. Once they are wrapped in plastic wrap, they are good to go. No refrigeration or microwaving necessary.
