I wish I’d taken a picture but I did not. Last night I made patty melts with Swiss cheese. There are just two of us for dinner these days and I had a pound of hamburger. I could have frozen half, which I often do, but when I was at the store I had picked up some little slider buns, thinking of my daughter’s lunches.
I mixed up the pound of hamburger with cracker crumbs, mustard, an egg, Worcestershire, parsley, salt and pepper, then shaped half of it into two large oval-shaped patties, to match the shape of the rye bread for patty melts. The other half I made into 4 small patties and cooked, then refrigerated.
I packed her lunch this morning in my new Easy Lunch Box containers with two little sliders and some ketchup, some carrots sticks and some walnuts. (She’s into walnuts these days.) If you’re into packing lunches, check out some of the bento like containers, especially for the sauces and such. Really, a pretty lunch is much more appetizing I’m sure. She said she got several comments from kids who said “Man, your mom made sliders for you! Will she make my lunch?!” This is in high school. I’m sure it would be an even bigger hit in elementary school. The buns freeze. The burgers freeze. Pretty easy to pack a fun lunch if you think ahead a bit. And I’d rather think ahead a bit than spend much money on the school lunches.
