Okay, I’ve said before I don’t watch many cooking shows but somehow I stumbled upon Big Daddy’s House on the Food Network and was taken with his beef salad. You can see his original recipe here. I knew we didn’t do big spices and I took a little nibble of one of those chipotle peppers in adobo sauce and knew I needed to tone it down a bit! Whew! So I only used 2 peppers, but then followed the rest of his recipe.
I have to say the salad was okay but not as great as he made it look. The steak however was dynamite! Now I just need to figure out something else to do with the rest of the chipotle peppers and adobo sauce.
Tonight I took some of the steak and sliced it very thinly, then just let it to come to room temperature. I made a salad with some lettuce, celery, alfalfa sprouts and blue cheese bits, then added some Durkee’s French fried onions on top. Oh my. Went great with the French fries.
I’ve still got some steak left over for sandwiches or something. Thinking a panini with some mango chutney and those onions… Or some hash or burritos or quesadillas.
Big Daddy’s Chipotle Flank Steak
Ingredients
- 2 chipotle chilies
- 1/2 cup olive oil plus 2 Tablespoons, divided
- juice of 2 limes
- salt and pepper to taste
- 1 flank steak
Instructions
- Use a food processor or blender to puree the chilies, 1/2 cup olive oil and the lime juice. Season with salt and pepper.
- Marinate the flank steak at least 30 minutes, then grill.
