Dorie's Cafe-Style Grated Carrot Salad


  • 1 pound carrots, peeled and grated
  • a handful of raisins
  • a handful of dried cranberries
  • a handful of chopped walnuts
  • a handful of chopped parsley
  • 2 Tablespoons Dijon mustard
  • 1 Tablespoon honey
  • 1/4 cup apple cider vinegar
  • 1/2 cup mild oil
  • salt and pepper to taste


  • Toss together the grated carrots, raisins, cranberries, walnuts and parsley.
  • Mix together the mustard, honey, vinegar, oil, salt and pepper. (You can whisk it in a bowl, shake it in a jar or blend it in the food processor if you used one to grate the carrots.)
  • Just before serving, pour the dressing on and mix well.
