1boneless skinless chicken breast, partially thawed and diced
3stalks of celery, diced
2 -3carrots, peeled and diced
1clovegarlic, minced
1thumb sized piece of ginger, peeled and mincedoptional
4cupschicken broth and 2 cups water
1/2 - 1cupraw rice
salt and pepper to taste
Instructions
Heat the oil and add the chopped onion, stirring and cooking a few minutes.
Add the diced chicken and cook until done, while you're peeling and dicing the celery and carrots.
Add the celery and carrots while you mince the garlic and ginger, if usingĀ Stir and let cook a minute or two, then add the garlic and ginger and cook another minute.
Add the broth, water and rice.
Bring to a simmer and cook partially covered until the rice is done.
