Fried Rice with Steak, Asparagus, Carrots and Onion
An easy formula for fried rice with lots of 4s.
Ingredients
1onion, halved lengthwise, then each half cut in 6 wedges
4-6ouncesleftover steak or other meat, cooked and cut in bite sized pieces
4-6ouncesvegetables, cut in bite sized pieces
1clovegarlic, minced
2eggs, beaten together
4Tablespoonssoy sauce, divided
4Tablespoonsoil, divided
4cupscooked rice
4green onions, chopped
Instructions
Set a heavy-bottomed pan over low heat while you prep everything.
Marinate the meat in 1 Tablespoon of soy sauce while you prep the vegetables.
Increase the heat to medium high. (Turn on your exhaust fan!)
Add 1 Tablespoon of oil to the pan and then the onion wedges, stir-frying until the onion starts to turn color but is still crisp, about 1-2 minutes. If you're using raw meat or vegetables, add them first, stir-frying a minute or so before adding the cooked meat or vegetables. Cook another minute. Add the garlic and stir in, cooking just briefly, then remove everything to a plate.
Add the remaining 3 Tablespoons of oil to the pan. When it's hot, add the rice, stirring to break up any clumps. Cook about 2 minutes, stirring the whole time. Add the beaten egg, pouring it around on top of the rice, not just dumping it all in one place. Stir another minute as the egg cooks. Add the cooked meat and vegetables plus the 3 Tablespoons soy sauce and green onions. Stir to combine and then serve.
