Heavenly Zucchini Bread

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 cups grated zucchini
  • 1 Tbs vanilla
  • 3 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 2 tsp cinnamon

Instructions

  • Beat the eggs well, then add the oil, sugar, zucchini, and vanilla and blend.
  • Add the rest of the ingredients and mix.
  • Pour into two greased loaf pans and bake 1 hour at 325 F.
