Peach Salsa

Try this peach and tomato salsa on grilled salmon or chicken.

Ingredients

  • 3 cups diced fully ripened tomatoes
  • 2 cups diced fresh peaches
  • 1/4 sliced green onions
  • 1 Tbs minced jalapeno pepper, seeds removed optional
  • 2 1/2 tsp. grated fresh ginger
  • 1 tsp salt
  • 1 1/2 Tbs lime juice

Instructions

  • Mix together and let sit 30 minutes or so.
