Thanksgiving Leftovers Soup
This soup uses up leftover green beans, roasted root vegetables and creamed onions. Vary it according to your own Thanksgiving leftovers.
Ingredients
1/2
an onion, diced

Tbs
olive oil
leftover green bean casserole
about 1 cup
leftover roasted root vegetables
about 1 1/2 cups
leftover creamed onions
about 1/2 cup
1
quart
turkey broth
1 15
oz
can diced tomatoes
2
Tbs
chopped fresh parsley
Instructions
Saute the onion in the olive oil until softened, then add the leftover vegetables, the broth, tomatoes, and parsley.
Simmer 20 minutes or so to blend the flavors.
