I’m trying a new zucchini refrigerator pickle this year. Last year I made these zucchini refrigerator pickles. I remember liking them but getting a bit tired of them and I gave a quart to a friend. Her family loved them!
Today I saw The Urban Homestead Experiment’s post on Refrigerator Green Pepper Pickles and decided to try them with zucchini, which she mentioned, since I don’t have a ton of green peppers but I do have lots of zucchini! I added a bit more garlic and some sliced onion, plus a few sliced hot peppers from the garden. I’m surprised at no salt in this recipe and wonder if I’ll miss other flavors like the mustard seeds. If so, I’ll just doctor them and let them sit another 24 hours I guess.
