San Francisco Joe’s Special

I first made San Francisco Joe’s Special, a skillet dish of ground beef, spinach and eggs 11 years ago! And I’ve made it many times since.  I have used frozen spinach but usually use fresh, and usually when I’ve bought the big bag of spinach at Costco.

I’ve varied the seasonings a bit, lately adding Worcestershire rather than just salt.  Some people skip the Parmesan cheese on top but I like it.

San Francisco Joe’s Special

Ingredients

  • 2 Tbs oil
  • 1 onion, chopped
  • 1 clove garlic, minced
  • 3/4 – 1 pound of ground beef
  • a good splash of Worcestershire sauce
  • 1 pound fresh spinach, steamed or blanched, and chopped you could use frozen of course
  • 4 eggs, lightly beaten
  • a dash or two of Tabasco sauce
  • salt and pepper to taste
  • 1/4 cup grated Parmesan cheese

Instructions

  • Bring a large pot of water to boil. When it boils add the spinach and cook just 1 minute, stirring. Then drain by pouring into a colander. When it’s cool enough to handle, pick up handfuls and squeeze out the excess water. Roughly chop the drained spinach.
  • Heat the oil and cook the onion and garlic until softened. Add the ground beef and brown it as you break it up into small pieces.
  • When the meat is cooked, add the spinach and cook a few minutes. Stir in the Worcestershire sauce and salt and pepper to taste.
  • Mix together the eggs and Tabasco, then pour into the meat and spinach mixture, stirring until the eggs are set.
  • Pour the whole thing out onto a platter and top with the Parmesan.
