Bubble and Squeak

Ingredients

  • 2 cups chopped cabbage
  • 2 cups mashed potatoes
  • salt and pepper to taste
  • a bit of oil for frying

Instructions

  • Cook the chopped cabbage in boiling salted water for 5-10 minutes and drain.
  • Mix the cooked cabbage with the mashed potatoes and season with salt and pepper.
  • Heat the oil in a frying pan. Put a spoonful of the potato and cabbage mixture in the pan and flatten a bit with your spatula. Let cook over medium heat until lightly browned. Flip over and cook till the other side is browned. Serve immediately.
