Okay, when I see the same basic idea in three different places I figure it’s time to try it. This is so simple, you don’t need any measurements. Basically it’s the simplest carrot salad with grated carrots, olive oil and lemon juice. Plus a pinch of salt if you’d like. That alone was delicious but I kind of wanted something green.
I remembered seeing something similar in Jamie’s Food Revolution: Rediscover How to Cook Simple, Delicious, Affordable Meals so I pulled that out. He suggested adding chopped cilantro (parsley would work well too, maybe mint even). I did that and the taste factor went up a notch. He also suggested adding mandarin oranges. I had just bought a bag at the grocery store for snacks so peeled one and pulled it into sections. Wow! Loved this. Loved it just as much today when I had the leftovers for lunch!
- peeled and grated carrots (about 1 carrot per person)
- chopped fresh cilantro (or parsley or mint)
- some mandarin orange segments
- olive oil
- lemon juice
- salt
No need for measurements. Grate as many carrots as you’d like and add a handful of cilantro. Pour some olive oil on and toss until lightly coated. Squirt a bit of fresh lemon juice on to taste. Taste and salt if needed. Add the mandarin orange segments if you have some. Maybe canned would work but they might be overly sweet.

This looks delicious and refreshing. I used to work at a BBQ place and we tried many different recipes of carrot-raisin salad before settling on something similar to this with sugar and some sour cream. Not too much, but it helped coat the carrots.
I like the idea of adding cilantro.
