My understanding is that in Britain Shepherd’s Pie is made from lamb and Cottage Pie is made from beef. In the United States, I’ve never heard of Cottage Pie and what I fixed tonight would be called Shepherd’s Pie by anyone I know, and any restaurant I’ve been to (admittedly not many!). So I make no claims to tradition, but I will say this is quite good!
I had mashed potatoes left over from the roast turkey dinner I made on Sunday night. I specifically made a lot, thinking of doing a shepherd’s pie. I also had those spice grinders that The Spice Depot had sent and was thinking one might make a nice addition. I ended up using the Salad Seasoning and it turned out great. I referenced Cooking For Engineer’s version of this while cooking.
Shepherd’s Pie with Ground Turkey and Creamed Corn
Ingredients
- 1 pound ground turkey
- 1/2 a large onion diced
- 1 carrot peeled and diced
- 1 Tbs olive oil
- a few grinds of Salad Seasoning or just add some garlic salt and pepper thyme, and/or rosemary
- 1 Tbs flour
- 1 cup beef broth I used Minor’s Beef Base, available at my Costco
- 1 14.5 oz can of creamed corn
- 3-4 cups of leftover mashed potatoes
- 2 Tbs butter
- 1-2 tsp paprika
- Preheat the oven to 350 F.
Instructions
- Heat the oil while you’re dicing the onion and carrot and add them to the pan. Add the ground turkey (or ground beef), then stir to break up and cook until browned. Drain off any extra fat.
- Add the flour and stir and cook a few minutes, then add the beef broth and cook another 5 minutes or so.
- Pour into a shallow casserole dish. Pour the can of creamed corn over the top, then spread the mashed potatoes on top of that.Cut the butter up into small pieces and scatter, then sprinkle paprika over it all.
- Put into the oven and bake 30 minutes or so.
Mmmmm! Pure comfort food.
