Shepherd's Pie with Ground Turkey and Creamed Corn
Ingredients
1poundground turkey
1/2a large oniondiced
1carrotpeeled and diced
1Tbsolive oil
a few grinds of Salad Seasoning or just add some garlic salt and pepperthyme, and/or rosemary
1Tbsflour
1cupbeef brothI used Minor's Beef Base, available at my Costco
1 14.5ozcan of creamed corn
3-4cupsof leftover mashed potatoes
2Tbsbutter
1-2tsppaprika
Preheat the oven to 350 F.
Instructions
Heat the oil while you're dicing the onion and carrot and add them to the pan. Add the ground turkey (or ground beef), then stir to break up and cook until browned. Drain off any extra fat.
Add the flour and stir and cook a few minutes, then add the beef broth and cook another 5 minutes or so.
Pour into a shallow casserole dish. Pour the can of creamed corn over the top, then spread the mashed potatoes on top of that.Cut the butter up into small pieces and scatter, then sprinkle paprika over it all.
