Creamy Salad Dressing from Jacques Pepin

This is another hit from Jacques Pepin’s Fast Food My Way. You can visit the KQED site here and watch some of the videos. I’ve been recording the old ones and watching them on tv as KQED is showing them again.   He says this was his mother’s favorite dressing for salad and I can see why!  This makes enough to dress about 8 cups of greens (so 4 large servings).

Creamy Salad Dressing

Ingredients

  • 1/4 cup heavy cream
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 1/2 tsp red wine vinegar

Instructions

  • Whisk together the cream, salt and pepper until a bit frothy, then stir in the vinegar.  Toss with 8 cups of greens.

I used red leaf lettuce last night and it was fantastic!  Especially with salad dressings, I find the simplest are the best. Note: the picture was taken before all the greens were added. There won’t be that much dressing once you’re done.
